For 4 people
- 1 kg raw sauerkraut
- 2 tbsp Livar powder
- 2 Livar sausages
- 1 Livar smoked sausage
- 2 white onions
- 400 g smoked Livar breakfast sausage
- 400 g smoked Livar rib eye
- 200 g dry white wine
- 400 g vegetable broth
- 2 bay leaves
- 5 juniper berries
For the potato mousse
- 1 kg floury potatoes
- 100 g milk
- 100 g cooking cream
- 100 g room butter
- Salt, to taste
- Nutmeg, to taste
- Fry 2 Livar sausages around in brown in Livar lard and remove from the pan. Then cut 2 white onions into thin rings and fry in the same lard.
- As soon as the onions have browned nicely, add the raw sauerkraut and stir everything well. If you want it to be less acidic, first rinse the sauerkraut under cold water.
- Add the smoked Livar breakfast bacon, the smoked Livar ribeye and the 2 sausages to the pan and add dry white wine and vegetable broth. Simmer for 60 minutes over low heat with the lid on the pan.
- In the meantime, make the potato mousse. Peel and boil 1 kg of russet potatoes in boiling water. In a saucepan, heat the milk, cream and butter.
- As soon as the potatoes are cooked, push the potatoes through a sieve with the back of a small spoon. Add the mixture of milk, cooking cream and cream butter to this. Season with salt and nutmeg. Bring to a boil.
- Add the last 10 minutes of the Livar smoked sausage to the pan to warm it up.
- Cut the breakfast bacon, the smoked rib eye, the sausages and the smoked sausage into slices and serve together with the sauerkraut and the potato mousse.
