Pita Kebab
Some dishes instantly put you in the holiday mood. This pita with Livar gyros strips does just that. Our gyros strips can be fried in no time and this dish can be on the table within half an hour. In Greece, you often get chips in your pita too. We've opted for an easier version. You could also choose to add some feta to the pita!
For 5 pitas
- 5 artisanal pitta breads
- 500 grams of Livar gyros strips
- 2 small red onions, sliced
- 4 tomatoes, sliced
- 1 teaspoon za'atar
- 1 piece, finely chopped
- 1/2 lemon, juice
- Olive oil
For the tzatziki
- 500 g Greek yoghurt, 10%
- 1 cucumber, grated
- 3 cloves of garlic, grated
- 2 tbsp good olive oil
- 1 lemon juice
- 2 cloves garlic, finely chopped
- 2 sprigs dill, finely chopped
- 1 teaspoon za'atar
- Salt and pepper to taste
- First, make the tzatziki. For this, grate the cucumber using a coarse grater and squeeze out all the liquid. Then add the cucumber and all the other ingredients to the Greek yoghurt and let the flavours meld for at least half an hour.
- Toast the pitas in a steel pan, turning them occasionally. Remove them from the pan and add a little olive oil. First, fry the red onion and then add the gyros strips. Fry until crispy.
- Assemble the pitta breads with some tzatziki, the fried gyros strips, and tomato slices. Finish with a little lemon juice, olive oil, za'atar, and mint.
