Limburg's Katenspek is made from a beautifully marbled piece of belly pork from the Livar pig. This is first seasoned and salted, then smoked and baked. The Katenspek can be recognised by its warm, spicy flavour and is often used in a wintery stamppot (mashed potato dish) or combined with rye bread with pea soup.
