Smoked farmers' hind leg ham is made from the marbled coburger of the Livar pig. It is traditionally roped, lightly smoked on beech wood and slowly cooked. Smoked ham has a savoury, lightly smoked flavour and a creamy and tender mouthfeel. As a result, the ham is often used as a sandwich spread or combined in a dish with asparagus.
